My son and daughter are going to be traveling out of the country soon and I am learning how to use a webcam. This is good. I will be able to see and talk to them at the same time. I will be able to see if they are really well and feeling fine and not just telling me that so I don't worry. You know we mothers - we worry. I am planning on making a first aid kit and a travel pharmacy for Jeriann, I think I have thought of everything. The only thing is, if she does get sick, how will I get her sopa de fideo to her?? Maybe I can make it ahead and can it and send it with her? Hmm, that might work. I'll experiment and let you know. If all else fails, I will send the ingredients and the recipe with her in a kit and she'll have to make it herself. Not the same but close.

I'll post the recipe for you all to enjoy.

Sopa De Fideo
1 package of fideo
1 small can of tomato sauce
1/2 yellow onion finely chopped
2 tablespoons of olive oil
filtered water or chicken broth
chicken base to taste
a few cilantro sprigs
chicken breast (1) or thigh (4), completely cooked and slivered into bite size pieces

Heat skillet to medium temp then saute onions until translucent, add fideo, and turn frequently to brown. Do not allow to burn.

Add enough chicken stock or filtered water to fill pan at least 1 inch above the fideo. Add tomato sauce just enough to turn the water pink. Do not add the whole can. Add the chicken base and the chicken, if desired, to taste and bring to slow boil for about 5 minutes, stirring frequently as it simmers. Add the cilantro sprigs. Cover and remove from heat. The fideo will thicken as it cools and absorb a lot of the fluid.

Ready to eat as is. Great by itself and even better with homemade frijoles and tortillas de harina. Mmm good!

Sopa de Fideo for the Latin Soul

Bienvenidos! Welcome to my blog. This is my first posting and my very first blog. I plan to share thoughts, stories, recipes, and happy memories of my childhood with you. Let's relax by the kitchen and have a cup of coffee and visit. Together we'll solve the world's problems.

I remember being sick a few times in my life and my mother always took good care of me. Una buena madre. She would make sopa de fideo with little bits of chicken in it. Mm, delicioso. Not only was it delicious but it also made me feel good, and as a result, I always got well. It worked like magic; my tummy full of good, hot sopa de fideo made by my loving mother. My spirits lifted; I soon became well.

The Lord is like that; He feeds our soul with his precious word. It fills my heart with gladness.
Blessed are they which do hunger and thirst after righteousness for they shall be filled. Matt 5:6
